2 Manor Farm chicken breast fillets, sliced

1 onion, chopped finely

110g mushrooms, sliced

1 clove garlic, crushed

300ml white wine

1 chicken stock cube

200ml cream

Fresh spinach leaves

100g sun dried tomatoes

Fresh basil

Grated parmesan

Preparation/Cooking Steps
In a large sauce pan sweat off the mushrooms, onions and garlic for a 2 – 4 minutes. Add the wine and reduce by half by allowing to simmer gently.
Add the cream, bring to the boil and add stock cube and cook for a few minutes.
In a separate pan stir fry off the chicken for 7 – 8 minutes, add to the cream mixture with the sun dried tomatoes.
Finally add the spinach and cook for 2 – 3 minutes. Season with salt and pepper.
Toss the cooked pasta into the sauce and serve immediately with grated parmesan.
