Chicken Mince Tacos

Ingredients

  • 900 g Manor Farm chicken mince
  • 2 tbsp olive oil
  • 1 Finely chopped medium red onion
  • 4 Garlic cloves, minced
  • 1 tbsp Paprika
  • 2 tsp Chilli powder
  • 1.5 tsp Ground cumin
  • 0.5 tsp Dried oregano
  • 0.2 tsp Cayenne pepper
  • 0.75 tsp Salt
  • 1 can Tomato sauce
  • 0.5 cup Chopped fresh cilantro
  • 12 Taco shells
  • 150 g Shredded lettuce
  • 200 g Shredded cheese
  • 2 Chopped peppers
  • 100 g Cherry tomatoes

Instructions

  • Preheat your oven to 160 degrees Celsius. Over a medium heat, warm the oil in a large skillet. Saute the onions for about 10 minutes until they start to brown and then add the garlic and cook for another few minutes.
  • Add the chicken, paprika, chili powder, cumin, oregano, cayenne, and salt. Increase the heat to high and use a wooden spoon to stir and break up the chicken mince into small chunks until the chicken is partially cooked, this should take about 5 minutes. Stir in the tomato sauce, reduce the heat to low and simmer, stirring occasionally for about 10-15 minutes or until the chicken is cooked through. Sprinkle with fresh cilantro.
  • Lay the taco shells onto a baking sheet. Place into the oven and bake for 6-7 minutes or until crispy. Spoon the chicken into the shells and serve with toppings.
