Fruity Chicken Curry

Ingredients
2 Manor Farm chicken breast fillets, cut into small cubes
2 Tbsp vegetable oil
1 onion, peeled and chopped
1 clove garlic, crushed
1 small carrot, finely diced
1 medium apple, thinly sliced
1 Tbsp medium curry powder
1 Tbsp mango chutney
1 Tbsp tomato puree

Instructions
Sauté the onion, garlic and carrot for 3 minutes in a saucepan, until soft and not coloured.
Add the chicken and curry powder and fry for 5 minutes, until chicken is cooked. Time will depend on the size of the cubes.
Add tomato paste, chutney, coconut milk, peas, and chicken stock and apple to saucepan.
Simmer for ten minutes and serve with rice.
