Fruity Chicken Curry

Ingredients

  • 2 Manor Farm chicken breast fillets, cut into small cubes
  • 2 Tbsp vegetable oil
  • 1 onion, peeled and chopped
  • 1 clove garlic, crushed
  • 1 small carrot, finely diced
  • 1 medium apple, thinly sliced
  • 1 Tbsp medium curry powder
  • 1 Tbsp mango chutney
  • 1 Tbsp tomato puree
  • 100 g frozen peas
  • 150 ml coconut milk
  • 150 ml chicken stock

Instructions

  • Sauté the onion, garlic and carrot for 3 minutes in a saucepan, until soft and not coloured.
  • Add the chicken and curry powder and fry for 5 minutes, until chicken is cooked. Time will depend on the size of the cubes.
  • Add tomato paste, chutney, coconut milk, peas, and chicken stock and apple to saucepan.
  • Simmer for ten minutes and serve with rice.
