Chicken Mince Tacos

Ingredients
- 900 g Manor Farm chicken mince
- 2 tbsp olive oil
- 1 Finely chopped medium red onion
- 4 Garlic cloves, minced
- 1 tbsp Paprika
- 2 tsp Chilli powder
- 1.5 tsp Ground cumin
- 0.5 tsp Dried oregano
- 0.2 tsp Cayenne pepper
- 0.75 tsp Salt
- 1 can Tomato sauce
- 0.5 cup Chopped fresh cilantro
- 12 Taco shells
- 150 g Shredded lettuce
- 200 g Shredded cheese
- 2 Chopped peppers
- 100 g Cherry tomatoes
Instructions
- Preheat your oven to 160 degrees Celsius. Over a medium heat, warm the oil in a large skillet. Saute the onions for about 10 minutes until they start to brown and then add the garlic and cook for another few minutes.
- Add the chicken, paprika, chili powder, cumin, oregano, cayenne, and salt. Increase the heat to high and use a wooden spoon to stir and break up the chicken mince into small chunks until the chicken is partially cooked, this should take about 5 minutes. Stir in the tomato sauce, reduce the heat to low and simmer, stirring occasionally for about 10-15 minutes or until the chicken is cooked through. Sprinkle with fresh cilantro.
- Lay the taco shells onto a baking sheet. Place into the oven and bake for 6-7 minutes or until crispy. Spoon the chicken into the shells and serve with toppings.
