Manor Farm Healthy Chicken Burgers
 Servings 3 people
   
      Ingredients
- 400 g Manor Farm chicken mince
 - Zest of 1 lemon – keep juice for burger sauce
 - 2 Shallots finely diced
 - Grated ginger (thumb size)
 - 2 Cloves garlic finely diced
 - Sea salt to taste
 - Coriander finely chopped (alternatively use parsley or thyme)
 - 4 Slices of white cheddar (or cheese of your choice)
 - 6 Slices of streaky bacon
 - Iceberg lettuce shredded
 - Wholegrain buns
 - Oil for frying
 
Pickled Onion
- 1 Red onion finely sliced
 - Sea salt to taste
 - 4-5 tbsp White wine vinegar
 
Burger Sauce
- 3 tbsp Mayonnaise
 - 1 tbsp Worcester sauce
 - 1 tsp Tabasco sauce
 - 1 Lemon, juiced
 
Instructions
- Mix the Chicken Mince, lemon zest, shallots, ginger, garlic, salt and coriander together in a large bowl until combined.
 - Divide into 4 Burgers Tip: get a bowl of water and wet your hands to stop meat sticking to your hands. Place burgers in hot oiled pan. Cook for 10-12 minutes until cooked through.
 - Place slices of cheese on the burgers Tip: place a metal bowl over the pan to create steam in the pan and to melt the cheese (approx. 1 min).
 - Cook the bacon on the pan and when cooked place on the cheese topped burgers.
 - To make the pickled onion combine ingredients in a bowl.
 - Combine all the burger sauce ingredients and mix through the shredded lettuce.
 - Assemble lettuce with burger sauce onto the bottom bun then add the topped chicken burger, then add the pickled onion and finish by setting the bun top in place.
