Chicken a la King (for a party of 20)

Ingredients
- 1.5 kg cooked Manor Farm free range Irish chicken, diced
- 150 ml oil
- 4 Chopped chives
- 1 clove of garlic crushed
- 2 green, 2 yellow & 2 red peppers (cored seeded & diced)
- 750 g button mushrooms, quartered
- 125 g Plain flour
- 300 ml Milk
- 475 ml Chicken stock
- 1 large glass of nice white wine
- 142 ml single cream
- Fresh ground black pepper & salt
Instructions
- Fry onions, garlic & peppers in oil till soft, add mushrooms & cook.
- Stir in the flour & cook for 1 min.
- Gradually add milk, bring to boil stirring. Add the stock, wine & simmer for 3 mins until thickened.
- Add the cooked chicken & salt, pepper to taste.
- Simmer for 5 mins until heated through. Remove from heat stir in cream.
- Serve immediately with 750g plain boiled rice with parsley to garnish.
