Chicken & Chorizo

Ingredients
- 225 g cooked Manor Farm chicken, cut into cubes
- 115 g chorizo, sliced or diced
- 3 Tbsp vegetable oil
- 1 medium onion, finely chopped
- 1 celery stick, chopped
- 400 g long grain rice
- 1000 ml Chicken stock
- 1 Tbsp tomato puree
- 3/4 drops Tabasco sauce
- 75 g frozen peas
Instructions
- Heat the oil in a saucepan and cook the onion, celery and red pepper gently until soft. Add rice, chicken stock and tomato puree. Simmer uncovered for about 10 minutes.
- Stir in the chicken and chorizo, followed by peas and simmer for a further 5 minutes.
- Switch off the heat, cover and leave to stand for 5 minutes before serving.
