Fruity Chicken Curry

Ingredients
- 2 Manor Farm chicken breast fillets, cut into small cubes
- 2 Tbsp vegetable oil
- 1 onion, peeled and chopped
- 1 clove garlic, crushed
- 1 small carrot, finely diced
- 1 medium apple, thinly sliced
- 1 Tbsp medium curry powder
- 1 Tbsp mango chutney
- 1 Tbsp tomato puree
- 100 g frozen peas
- 150 ml coconut milk
- 150 ml chicken stock
Instructions
- Sauté the onion, garlic and carrot for 3 minutes in a saucepan, until soft and not coloured.
- Add the chicken and curry powder and fry for 5 minutes, until chicken is cooked. Time will depend on the size of the cubes.
- Add tomato paste, chutney, coconut milk, peas, and chicken stock and apple to saucepan.
- Simmer for ten minutes and serve with rice.
